Recipe modification
Find a recipe that you like that is relatively high in calories, saturated fat, trans fat, sugar, or salt.
2.Modify the recipe to reduce one, two, or three (not more)of the following: calorie content, sugar, fat or saltor to change the type of fat.
3.Makethe modified recipe.Evaluate the finished product for flavor, texture, appearance, and overall acceptability using a hedonic scale. (This will be provided and discussed in class)
.4.Have a friend, family, member or co-worker rate your recipe for the same criteria (flavor, texture, appearance, and overall acceptability) using a hedonic scale.
5.Type a summary of your experience including the following:
the original recipe
the modified recipe
a description of what you chose to modify and WHY you chose to modify that ingredient or amount:
Your completed hedonic scale
Your friend's completed hedonic scale
Describe how your modifications IMPROVED the nutritional quality of the recipe (i.e. what aspects it improved) and how it affected the recipe's acceptability.
