Vitamin Intake

      The assignments make use of the data you collected from your diet analysis assignment in Module 2. When answering questions about your vitamin and mineral intake, make sure that you indicate units after every number (grams, milligrams, and micrograms). Vitamin Intake Assignment   So that your answers are easier to read and grade, please use multiple paragraphs and breaks between nutrients. Question 1 Start with vitamin A.  How does your intake of vitamin A, measured in retinol activity equivalents (RAE), compare with the DRI?  What percentage of your recommended intake did you consume? List the foods from your diet record that contributed the greatest amount of vitamin A. If you consumed less than the recommendation, what foods could you incorporate into your diet in order to meet the recommendation?  If you consumed more than the recommendation, was this too much? Why or why not? How does your intake compare with the Tolerable Upper Level (UL) for vitamin A, which is shown on page C at the end of your text, following the index. What are the health issues associated with deficient intake of vitamin A? Are there risk factors associated with the overconsumption of vitamin A? If so, what are they? Answer those same questions for each of the following vitamins: thiamin, riboflavin, niacin, vitamin B6, vitamin B12, folate, vitamin C, vitamin D, vitamin K, and vitamin E (alpha tocopherol). Question 2 In several well-developed paragraphs, answer Critical Thinking Question #1 for Chapter 7: "List three reasons why someone might take a multivitamin supplement that does not exceed 100 percent of the DRIs. Would you ever take an antioxidant supplement? Why or why not? Suppose you decided that you should take a vitamin supplement because you do not drink milk. How would you determine the best supplement to purchase?" Question 3 Nutrition quackery is so common that it’s easy to become fooled. For this assignment, obtain information about a questionable nutritional product such as a nutrient supplement by performing an Internet search. Then evaluate the claims regarding the product using reliable sites on the Internet such as the National Center for Complementary and Integrative Health and Medline Plus. In 1-2 well-developed paragraphs, discuss the product you researched. What claims were made in its advertising, and what information did you find on credible Internet sources that refuted those claims? Question 4 Explain the difference between enrichment and fortification.  What foods from your diet fit into each category? With which vitamins are those foods enriched or fortified?  What is the impact of fortified foods on your overall vitamin intake? What about enriched foods? Do you think fortifying or enriching foods is always a good approach to preventing malnutrition? Why or why not?
